Heat oven to 425 degrees. Rinse and quarter the sweet potatoes. Mince the Rosemary. In a large bowl, combine the sweet potatoes, rosemary, salt, pepper, and smoked paprika. Drizzle the oil over everything. Toss or mix with your hands.
Roast the potatoes in the oven, occasionally turning, until they are soft at the center and beginning to crisp at the edges, approximately 30 to 40 minutes.
